Baked Latkas
7 russet potatoes, peeled, grated, and rinsed 1-2 teaspoons salt black pepper to taste 1 small onion grated 2 eggs 1/4 cup flour 1 tablespoon vegetable oil Beat eggs. Add potatoes after squeezing out moisture. Add remaining ingredients. Chill for 10 minutes. Heat oven to 475. Spray cookie sheet with Pam or other non-stick spray. Make tablespoon size pancakes. Bake for 10 minutes, then flatten with a wooden spoon. Bake 5 minutes more or untill brown, turn and bake on remaining side untill brown.
